Is a popular “feast” that many Americans of Italian heritage prepare on Christmas Eve. Before we dive into the details, recall that on March 17 we are all Irish! And much as corned beef & cabbage is an American construct, so is serving 7 different fish dishes on December 24. Here is a sample menu: Crab-stuffed mushrooms, clam chowder, seared scallops, foil-packet shrimp pasta, sheet pan salmon puttanesca, sea bass w/lemon garlic butter, & grilled lobster tails. And then there are those who eschew 7 different courses, and consolidate the different varieties of fish into a sumptuous dish served over pasta. And regardless of our heritage, we are going to use this wonderful Christmas Eve tradition as a backdrop to presenting a flight of white wines (and red wines) that will pair with a variety of seafood-centric dishes. And yes, there are red wines that work with seafood!
