Gavi, made exclusively from the Cortese grape which has a heritage dating back to the 1600s, was Italy's first white wine to gain international repute and to this day is still considered one of the top-ranking Italian whites.
Its reknown for ts bone-dry character and crisp, flinty and fresh acidity. The bouquet is particularly floral, offering delicate aromas reminiscent of white flowers, lemons, green apples and honeydew. It also often shows hints of almonds on the finish.
Gavi di Tassarolo 'Fornaci' is a single vineyard wine named after a brick-kiln (fornace) that used to stand in place of the vineyards, within the township of Tassarolo. Cortese grapes are soft pressed and fermented at a low temperature so as to maintain the classic, delicate floral and fruity bouquet of citrus, peach and green apple. The palate is dry and refreshing with a hint of bitter almond and can cellar well, developing toasty honeyed notes. A versatile dry white that is particularly well suited to seafood.
