Cellier aux Moines is a Domaine located in Givry a town that is perhaps a 20-minute or so drive south of Puligny. The roots of this Domaine can be traced back over 900 years to when it was inhabited by Cistercian monks. In 2004 the estate was purchase by Phillipe Pascal and his wife Catherine. Phillipe was the former CEO of L.V.M.H. (Louis Vutton Moet Hennessy) a mega luxury brand that owns labels such as Vueve Cliquot.
This once great estate had fallen by the wayside, the slopes surrounding the ancient monastery “La Ferte Abbey” were completely overgrown and the cellar needed a lot of attention. The estate is now equipped with a gravity feed system and is now the first certified organic estate in Givry. All pesticide and herbicides have not been used on the premises since 2006 once the estate was rounded back into shape.
Perhaps the most critical move the Pascal’s made was the elite talent brought in to over see the winemaking duties. Guillaume Marko has worked for some of the top producers in Burgundy such as Arnoux-Lachaux and the infamous Domaine de la Romanee Conti. The wines from Domaine Romanee Conti are among the most expensive and desirable wines in the world. Marko is quickly becoming one of the most in-demand winemakers in this incredible region.
The results of all the work put into this estate are nothing short of remarkable. Not only is Domaine du Cellier aux Moines putting out the best wines in Givry, but they are also putting this underrated appellation back on the map. The phylloxera epidemic coupled with a shortage of labor after WW I, winemaking in Givry was almost wiped out. Pascal wants to return this area into its former glory where wines from Givry were being served to the Pope. After tasting this wine, we can assure you that Pascal is well on his way to achieving that.
