If you look at a bottle of Champagne, there are 2 denominations that you need to remember. N.M. (meaning Negociant-Manipulant) will appear on the labels of the large champagne houses previously mentioned. This simply means these producers purchase all the fruit they use for their bottlings. An easy way for you to remember this the next time you are looking at the label is N.M. stands for “Not Mine”. R.M. (meaning Recoltant-Manipulant) means the producer of the Champagne owns the vineyard (or rows in a vineyard) from which the grapes are sourced, or in other words, estate fruit. An easy way to remember this is R.M. stands for “Really Mine”. There are over 19,000 growers in the region, they own approximately 88% of the vineyards in Champagne. 5,000 of these Growers produce their own wine, yet approximately 5% of the Champagne imported into the U.S. is Grower champagne.
